Quick Rest Effect Demonstration
The purpose of this experiment is to experience how resting affects gluten.#
Mix 1/2 cup flour with about 1/4 cup water to form a firm dough
Divide in half
Try to roll or stretch one piece immediately
Let the other piece rest, covered, for 15 minutes, then try to roll or stretch
Compare how each responds to being shaped
The rested dough will be much easier to shape and will hold its form better.
